Ingredients (1 glass)
For the cocktail
90ml dry white wine
30ml Marie Brizard elderflower liqueur infused with mandarin essential oil
5 drops of orange or mandarin bitter
300ml champagne (without bubbles)
100ml single cream
50ml whole milk
30ml agave nectar
In a cocktail shaker, combine the white wine, elderflower liqueur infused with mandarin essential oil, and 5 drops of the bitters. Completely fill the shaker with ice cubes, then stir with a spoon. Pour the mixture into a cocktail glass, filtering out the ice.
Mix together the champagne, cream, milk and agave nectar, then pour into a culinary siphon. Garnish the cocktail with this champagne mousse.
