N°15 Cocktail: rum, rye and vintage vibes

Cocktail Rum

Aurélien Galinier-Rey has created a cocktail recipe that will take you back in time to the era of cosy lounge clubs.

The name of this cocktail purposefully evokes a classic in the perfume world. It is also the street number of the Bar du Faubourg.

Reflecting the couture ambiance of the bar, the cocktail’s vintage aesthetic promises herbal notes, woodsy harmonies and accents of leather. The N°15 also exudes a timeless, androgynous feel with the smoky scents of lapsang souchong and blond cigars that will appeal to sharp-dressed dapper dans as well as women in Yves Saint Laurent’s scandalous trouser suits.

Ingredients (8 servings)

For the Sazerac (punch)

  • 500 ml Diplomático rum
  • 150 ml rye whiskey infused with lapsang soucho
  • 50 ml Campari

For the Golden Cadillac clarification

  • 100g caster sugar
  • 10 tsp fennel seeds
  • 15 ml Galliano L’Autentico liqueur
  • 300 ml double cream 20g cocoa nibs
  • 30 ml freshly squeezed lemon juice, strained

Method

In a large heatproof container, combine the Diplomático rum, rye whiskey infused with lapsang souchong and the Campari to make a punch.

In a saucepan, combine the sugar and fennel seeds, then lightly crush them together. Stir in the rest of the ingredients for the Golden Cadillac except for the lemon juice, and heat the mixture until it just begins to boil.

Slowly pour this hot mixture and the lemon juice into the punch. Cover and let infuse. After 45 minutes, strain the infusion through two coffee filters and a muslin cloth.

Pour 90 ml into each glass and serve.
