Roasted octopus with fresh herbs and mashed sweet potatoes with squid ink

Roasted octopus with fresh herbs and sweet potato purée with squid ink, green peppers, coriander, red wine vinaigrette.

Ingredients (for 1 person)

  • 1 fresh octopus
  • 1 tomato
  • 1 white onion
  • Sweet potatoes 150g
  • Fresh parsley sprigs
  • Coriander leaves
  • Red wine vinegar
  • Cuttlefish ink

1. Octopus preparation

Rinse the octopus under running water and clean it well, tentacle by tentacle, to remove any residue.

Roast the octopus for 2 hours at 180° with fresh parsley, coriander, a large tomato and a white onion (both whole with skin)

2. Sweet mash potatoes preparation

Roast sweet potatoes with olive oil, salt and pepper at about 175° - 40 minutes

3. Dressing 

Remove octopus from broth and set aside

Mash the sweet potatoes (without the skin), add the squid ink and the red wine vinegar
