Singapore Swing Cocktail

This perfectly balanced gin cocktail is a long drink with subtle notes of pandan and green cardamom.

The world-famous Singapore Sling is the emblematic cocktail of the Long Bar at Raffles Singapore hotel. Clément Emery, our talented mixologist at Royal Monceau - Raffles Paris, gives this signature drink a contemporary twist with exotic flavours.

By steeping pandan leaves in gin, the spirit is infused with hints of hazelnut and vanilla. Meanwhile, citric acid and bitters serve to counter the sweetness of artisanal pineapple soda. The Singapore Swing is easy to make, but be sure to use top-quality ingredients. For your next party, impress family and friends with this elegant cocktail!

Ingredients (1 glass)

  • Infused gin
  • 1 bottle Sipsmith Raffles 1915 gin
  • 3 pandan leaves


Cocktail

  • 60 ml infused gin
  • 10 ml marasquin liqueur
  • 10 ml aged sherry
  • 15 ml citric acid solution (or 30 ml lime juice)
  • 5 drops spicy bitters
  • Artisanal pineapple soda
  • Green cardamom essence

Method

Place the pandan leaves in the bottle of gin and let infuse in the refrigerator for 24 hours.

In a cocktail mixing glass, combine the infused gin, marasquin liqueur, aged sherry, citric acid solution and spicy bitters. Add ice cubes and stir for 10 seconds with a bar mixing spoon. Pour the mixture into a highball glass, filtering out the ice. Insert a long ice stick and top off the glass with artisanal pineapple soda. Stir gently. Finish the cocktail with a spray of green cardamom essence.
