At any time of the day, in this new living space, you can enjoy emblematic dishes such as organic egg mayonnaise, French onion gratinée soup, the brasserie's sauerkraut, beef tartare or sole meunière. A local native, Executive Chef Mathieu Klein graduated from Alexandre Dumas Hotel School in Illkirch. He owes his taste for cooking to his older brother. In 2004, he began his career as a chef at La Maison des Têtes**** in Colmar and developed his technical skills. He then completed "The Basics of Cooking" training at the Alain Ducasse school in Paris. Season after season in beautiful restaurants, in 2009 he landed his first role as head chef at Clos des Délices in Ottrott. Purist and demanding, he is attracted to precision on the plate and a mono-product approach. His cuisine is "simple, but not simplistic".
