Payoyo, an Andalucian speciality

Have you heard of payoyo? This type of cheese, made from the milk of sheep and goats, comes from Villaluenga del Rosario in the province of Cádiz. On our menu, payoyo appears in tasting platters and makes for a surprising addition in a burger with Iberian flavours.
