Pastry Chefs Yazid Ichemrahen & Alexandre Favre

Yazid Ichemrahen's path as a pastry chef began at the age of 3. For him, pastry-making is an escape from a difficult everyday life that lacks perspective, affection and recognition. Throughout his career, he has crossed paths with inspiring personalities and father figures such as Pascal Caffet, MOF and World Pastry Champion, who discovered and trained him; Angelo Musa, with whom Yazid Ichemrahen worked as a commis at the Pâtisserie des Rêves; and Joël Robuchon, whom he joined at the Métropole in Monaco. At the age of 22, he won the world championship for frozen desserts. Hand in hand with Alexandre Favre, Executive Pastry Chef and rising star of the French pastry scene, Yazid Ichemrahen works on the sweet menu of the most Parisian of palaces.

    The quality of service was there (thank you Anna) even if the staff's outfits could be revised to better reflect the "Palace" atmosphere.
    On the other hand, I was disappointed by the culinary part. Given the price and the description of this "exceptional brunch", I expected a superior experience to that of my previous visit, but I instead noticed a regression. First of all, there is no description of the dishes/salads offered. We don't know what we are eating and above all this is very problematic for food allergies and people with a specific diet (vegetarian, vegan). This is a basic service that is sorely lacking.
    Regarding meats, lamb and veal rice were on the menu, but absent during service. The chef explained that an extra person would have been needed to serve them. However, as a customer, this should not be my problem.
    In addition, no more traditional wheel of parmesan to serve pasta, although this had been a popular feature during my previous visit.
    Another promise on the menu was a wide variety of breads, but the advertised cornbread was once again missing.
    I also noticed a long waiting time for restocking at certain stands, particularly cheese. Had to ask 3 staff members to finally get it completed.
    Finally, as far as desserts are concerned, again no real entertainment, except for the pancakes, probably a repeat of breakfast. Previously, cakes were made a la minute, and it would be desirable to include one or two "real" cakes, rather than all these sweet treats. For example, I would have liked to taste a flan pastry, a Mont Blanc, or in this festive season, a log or a galette des rois.
    In summary, this brunch, supposed to be "exceptional", was nothing exceptional

    La qualité du service était au rendez vous (merci Anna) même si les tenues du personnel pourraient être revue pour mieux refléter l'ambiance "Palace".
    En revanche, j'ai été déçue par la partie culinaire. Compte tenu du tarif et de la description qui était faite de ce "brunch d'exception", je m'attendais à une expérience supérieure à celle de ma précédente visite, mais j'ai plutôt constaté une régression. En premier lieu, il n'y a aucune description des plats/salades proposés. On ne sait pas ce que l'on mange et surtout cela est très problématique pour les allergies alimentaires et les personnes avec un régime spécifique (végétarien, vegan). C'est une prestation basique qui fait cruellement défaut.
    Concernant les viandes, l'agneau et les riz de veau étaient au menu, mais absents lors du service. Le chef a expliqué qu'il aurait fallu une personne supplémentaire pour les servir. Toutefois, en tant que cliente, cela ne devrait pas être mon problème.
    De plus, exit la traditionnelle meule de parmesan pour servir les pâtes, alors que cela avait été une animation appréciée lors de ma précédente visite.
    Autre promesse sur le menu, une large variété de pains, mais le pain au maïs annoncé était une nouvelle fois manquant.
    J'ai également remarqué un temps d'attente long pour le réassort de certains stands, notamment le fromage. Il a fallu demander à 3 membres du personnel pour qu'il soit finalement complété.
    Enfin, en ce qui concerne les desserts, là encore pas vraiment d'animation, si ce n'est pour les crêpes, une reprise probablement du petit déjeuner. Auparavant, des gâteaux étaient préparés à la minute, et il serait souhaitable d'inclure un ou deux "vrais" gâteaux, plutôt que toutes ces mignardises. J'aurais par exemple aimé déguster un flan pâtissier, un mont blanc, ou en cette saison festive, une bûche ou une galette des rois.
    En résumé, ce brunch, censé être "d'exception", n'avait rien d'exceptionnel
