SKAI is a refined yet lively contemporary grill restaurant, situated on the 70th floor of acclaimed Swissôtel The Stamford. The iconic city views, seamless service and bespoke beverages makes for the perfect ambience to savour the menu curated by Executive Chef Seumas Smith, who has blended cutting edge culinary skills with a cooking philosophy to create a truly personal and progressive fine grill offering, and his dedicated culinary team.

With SKAI's extensive expertise in butchery, sourcing and curing premium quality beef, cooked to perfection in SKAI's state-of-the-art Josper Charcoal Oven; a must-try in the menu is the Miyazaki A4 Wagyu from Japan and the Tenderloin Oscar. Sharing cuts for two are also available such as the Stanbroke Black Angus.

SKAI features the finest produce with a respectful tribute towards Japanese ingredients; the lunch set menu comprises grains and salads, main courses and delicious desserts, while the dinner menu brings a more refined selection of sharing plates and Ishiyaki.

Executive Chef Seumas Smith

Born and raised in Scotland, Chef Seumas is renowned for his innovative approach to modern cuisine and this has helped him achieve incredible success throughout his career. Prior to joining SKAI, Chef Seumas led the team at Restaurant ION Harbour to gain its first Michelin Star within 6 months under his helm .

With the determination to learn in a kitchen setting rather than in a classroom, Chef Seumas applies this philosophy across his leadership style. With eyes set on taking SKAI's success to new heights, Chef Seumas looks forward to bringing his produce-driven, clean and precise style to SKAI, by adding more Japanese elements throughout the SKAI experience.

Modern Nordic meets Japanese simplicity interiors

Located on the 70th floor of Swissotel, with floor to ceiling windows, SKAI boasts a dramatic panorama of the Marina Bay skyline. The bright and airy contemporary grill takes inspiration from modern Nordic and Japanese simplicity; light maple wood and clean lines meet vertical design features and organic textures amidst the natural hues and warm tones of the 130-seater restaurant.

    I have been coming to SKAI restaurant almost once a month for over a year now, specifically for the Pork Chop—it’s incredibly juicy, flavorful, and cooked to perfection. Achieving this level of quality requires exceptional culinary skill, and SKAI delivers every time.

    As a pork chop lover, I have tried many including Porkmahawak across Singapore in various top restaurants, and SKAI’s pork chop stands out as the best—both in taste and value for money.

    A special thanks to Restaurant Manager Iswadi, who made a fantastic recommendation to pair the Burrata as an appetizer, followed by Beetroot and French fries alongside the pork chop. This combination, with the added vegetables, truly elevated the dining experience.

    Iswadi’s professionalism and attention to detail did not go unnoticed.

    I will definitely be back for the pork chop in the coming weeks!

    We had much expectations about the place…The service was sloppy with waiting for about 10 min before getting the ordered water. The wine came in OK and served appropriately.
    The food… hmm. We ordered the dinner chef menu (4 courses). The pre starter was ok and the Hokkaido scallop enjoyable. The mains weren’t. The cod was too cooked and anything but salt. The sirloin (ordered medium rare) came nearly well done. And the dessert… what was it again that gave this lasting impression? Can’t remember.
    Oh! And the most ridiculous was on the bread… they served a small loaf of milk bread (hmmm, who does when anyone expects sourdough…) and when we asked for another one (and we would obviously have paid for)…. This never came.
    Lastly, at the time of booking there was an interest regarding the booking for which I mentioned ´Anniversary ‘
    Was there any acknowledgement or even a small token of appreciation ? None…
    If you are into impressing a date with a view, this place may work as long as you have no good expectation on the food and/or the service and you don’t mind paying well overpriced dinner
