SKAI is a refined yet lively contemporary grill restaurant, situated on the 70th floor of acclaimed Swissôtel The Stamford. The iconic city views, seamless service and bespoke beverages makes for the perfect ambience to savour the new menu curated by Executive Chef, Paul Hallett, who has blended cutting edge culinary skills with a cooking philosophy honed through years of experience to create a truly personal and progressive fine grill offering.

Chef Paul lends his extensive expertise in butchery to SKAI, sourcing and curing premium quality beef, cooked to perfection in SKAI's state-of-the-art Josper Charcoal Oven. Featuring the finest produce with a respectful tribute towards Japanese ingredients; the lunch set menu comprises grains and salads, main courses and delicious desserts, while the dinner menu brings a more refined selection of sharing plates and Ishiyaki. Equally impressive is the array of mouth-watering desserts and photogenic pastry spread, all masterpieces created by our award-winning pastry team.

Executive Chef Paul Hallett

Growing up with rich agricultural surroundings in Wales cultivated Chef Paul's deep-rooted belief for using only high-quality produce and natural ingredients, an evident trait which has been incorporated into SKAI's menu. Melding his signature culinary flare with a passion for butchery, Chef Paul brings to life an elevated menu expertly infused with a delicate Japanese touch.

Modern Nordic meets Japanese simplicity interiors

Located on the 70th floor of Swissotel, with floor to ceiling windows, SKAI boasts a dramatic panorama of the Marina Bay skyline. The bright and airy contemporary grill takes inspiration from modern Nordic and Japanese simplicity; light maple wood and clean lines meet vertical design features and organic textures amidst the natural hues and warm tones of the 130-seater restaurant.

    Nice view, especially the sunset. Best timing to go at 6pm to see the day and night views. Food is good, service staffs are attentive and friendly. You need to request for window seat earlier in your booking. Nonetheless, the seats away from the window are just as cosy and view is superb.

    Came for lunch. View is of course amazing. Service staff were very polite and detailed in their explanation of the food courses. Very pricey though. Need to come with the credit card promotion.

    How many times have you been to a restaurant where the view takes your breath away, the staff's courtesy warms your heart and the food simply blows your mind? That's what my experience at SKAI was like. The three course Sunday brunch was simply amazing. The chicken and salmon were deliciously cooked, the cod starter was so light and lovely and the...

    Choux was beautifully done. But the best part was the drinks. I tried the Mango Martini. The mango, turmeric, gin and spices were mixed so amazingly that the drink was like summer in a glass!

    Came here for the first time to celebrate my 20th birthday. No regrets! The view was breathtaking, though we wished we could have sat closer to the windows. The bread with garlic butter was the best I've ever tasted. Tried the wagyu and it was so good too, perfect with red wine sauce. The scallops were also exceptional. The lamb ribs were well cook...

    ed too, there wasnt any gamey taste, everything was very harmonius. Got a free brownie for my birthday too!! But because we were so full from the really delicious treats before, we couldn't finish it. The portions are all very reasonable. Will definitely return one day!
