SKAI is a refined yet lively contemporary grill restaurant, situated on the 70th floor of acclaimed Swissôtel The Stamford. The iconic city views, seamless service and bespoke beverages makes for the perfect ambience to savour the menu curated by Executive Chef Seumas Smith, who has blended cutting edge culinary skills with a cooking philosophy to create a truly personal and progressive fine grill offering, and his dedicated culinary team.

With SKAI's extensive expertise in butchery, sourcing and curing premium quality beef, cooked to perfection in SKAI's state-of-the-art Josper Charcoal Oven; a must-try in the menu is the Miyazaki A4 Wagyu from Japan and the Tenderloin Oscar. Sharing cuts for two are also available such as the Stanbroke Black Angus.

SKAI features the finest produce with a respectful tribute towards Japanese ingredients; the lunch set menu comprises grains and salads, main courses and delicious desserts, while the dinner menu brings a more refined selection of sharing plates and Ishiyaki.

Executive Chef Seumas Smith

Born and raised in Scotland, Chef Seumas is renowned for his innovative approach to modern cuisine and this has helped him achieve incredible success throughout his career. Prior to joining SKAI, Chef Seumas led the team at Restaurant ION Harbour to gain its first Michelin Star within 6 months under his helm .

With the determination to learn in a kitchen setting rather than in a classroom, Chef Seumas applies this philosophy across his leadership style. With eyes set on taking SKAI's success to new heights, Chef Seumas looks forward to bringing his produce-driven, clean and precise style to SKAI, by adding more Japanese elements throughout the SKAI experience.

Modern Nordic meets Japanese simplicity interiors

Located on the 70th floor of Swissotel, with floor to ceiling windows, SKAI boasts a dramatic panorama of the Marina Bay skyline. The bright and airy contemporary grill takes inspiration from modern Nordic and Japanese simplicity; light maple wood and clean lines meet vertical design features and organic textures amidst the natural hues and warm tones of the 130-seater restaurant.

    Visited Skai with a group of 5 pax. Service was excellent as the staff were attentive and kept asking how was the dining experience. Food was great especially the codfish. Seats were also very comfortable and almost fell asleep. The view was also amazing since the restaurant is located at the 70th floor. The butter that accompanied the bread appetiser was also special and in house.

    Overall atmosphere is good, food is ok, service was very average until at the end it dropped to 1 star.
    Atmosphere: the place have good decoration, nice relaxing music and fabulous view of Marina Bay and Singapore river, not super crowded, so good place for intimate gatherings
    Food: food is what you’d expect for the price, nothing impressive for 100+ lunch (ex drinks). The salmon tartar is a little too salty, the portion size is small. Only 1 piece of small bread for 2 pax to share (tho you can ask for more but the feeling is no good vs other restaurants who just send a small basket of breads. The restaurant prepared complimentary cakes for us for the birthday celebration, which was very nice.
    Service: staffs are pretty fast in replacing the plates and cutleries. However, water was not promptly refilled, and Ivy brought the bill before we even ask for it and with out warming, making us feeling very weird and being chased to leave. When she heard we want to use capital voucher to pay, she then recommended us to pay the rounded up amount instead of suggesting ways to pay the actual amount… first time getting this request from any restaurant not to say this is supposed to be one of the higher-end ones. Her facial expression also showed us how much we weren’t welcome then. And eventually the receipt we got after payment was the rounded-down amount, not even the actual amount. The bill presentation and settlement part was the killer of the overall experience.

    View-wise is ok as we have a table next to the window. It would be better if there were no patches of bird pooped on the window. 😀 but understand its tricky location, so it's hard to clean the window.

    Not all desserts for the high tea are nice, for example, the muffin and Christmas design dessert. The texture of muffin is good, but the chocolate powder that covers the muffin makes the mouth so dry and feels like chocking.
    The Christmas design dessert sweetness is overwhelming. However, the scones and trarts are done well.

    Environment wise, there are stairs within the dining sections, and the tables are near to each other. I personally feel that it may not be suitable for wheelchair and baby pram users. Not even young kids that like to run around, too.

    There is a lot to like about Skai restaurant. Previously called the equinox, it has one of the best views of Singapore, perhaps if you can only see one view of Singapore, that would be it.

    Food is well curated and the complimentary bread served with the main courses are fantastic and the butter is really not the norm in Singapore.

    I was hesitant about the fine dining set meals as well because as you know, fine dining won’t make you full. I was surprised that the portions were enough to make you feel full but not bloated without a lot of carb overloading.

    Great choice.
